Ingredients:

2 cups (250 g) all-purpose flour

1 cup (200 g) granulated sugar

2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

2 large eggs

1 cup (240 ml) milk

1/2 cup (120 ml) vegetable oil or melted butter

1 tsp vanilla extract

 

Instructions:

1. Preheat your oven to 180°C (350°F). Line a muffin tray with paper liners.

2. In a large bowl, mix the flour, sugar, baking powder, baking soda, and salt.

3. In another bowl, beat the eggs, then add the milk, oil (or melted butter), and vanilla extract. Mix well.

4. Pour the wet mixture into the dry ingredients. Stir gently until just combined. Do not overmix.

5. Fill each muffin cup about 3/4 full with the batter.

6. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.

7. Let them cool on a wire rack before serving.
