Ingredients:
2 eggs
4 tablespoons sugar
1 teaspoon vanilla extract
1 cup milk
2 tablespoons vegetable oil or melted butter
1 and 1/2 cups flour
1 tablespoon baking powder
A pinch of salt
Cheese or chocolate for filling
Butter or oil for cooking
Preparation:
In a large bowl, beat the eggs with sugar and vanilla until well combined.
Add milk and oil (or melted butter), and mix.
In a separate bowl, sift together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients and mix until you get a smooth batter.
Heat a non-stick pan or special pancake mold over medium heat and lightly grease it.
Pour a spoonful of batter into each mold hole or pan section.
Add a small piece of cheese or chocolate in the center.
Cover with another small spoon of batter to seal the filling.
Cook on low to medium heat until golden brown on both sides (flip carefully if needed).
Serve warm, optionally sprinkled with powdered sugar or drizzled with honey.
