Salmon with Asparagus in Foil

Ingredients:

2 salmon fillets

1 bunch of asparagus, trimmed

2 tablespoons olive oil (or melted butter)

3 cloves garlic, minced

2 tablespoons fresh parsley, chopped

2 tablespoons lemon juice (plus slices for garnish)

1 teaspoon lemon zest

Salt and black pepper, to taste

Optional: a pinch of red pepper flakes

Instructions:

1. Preheat oven to 400°F (200°C).

2. Prepare foil packets: Cut 2 large pieces of aluminum foil. Place a salmon fillet in the center of each piece. Arrange asparagus spears next to the salmon.

3. Make the garlic butter sauce: In a small bowl, mix olive oil (or melted butter), garlic, lemon juice, lemon zest, parsley, salt, and black pepper.

4. Drizzle the sauce evenly over salmon and asparagus. Place a lemon slice on top of each salmon fillet.

5. Seal the foil packets: Fold the sides of the foil over the salmon and asparagus, sealing tightly to trap the steam.

6. Bake in the preheated oven for about 15–20 minutes, or until salmon flakes easily with a fork and asparagus is tender.

7. Serve immediately, garnished with extra parsley and lemon wedges if desired.
