Ingredients:

1 cup (230 g) butter

1/2 cup (100 g) brown sugar

1 teaspoon vanilla extract

3 cups (240 g) quick-cooking oats

1 cup (175 g) semi-sweet chocolate chips

1/2 cup (125 g) peanut butter

Instructions:

Prepare the oat mixture:
In a medium saucepan over medium heat, melt the butter. Stir in the brown sugar and vanilla extract. Add the oats and cook for 2 to 3 minutes, stirring constantly.

Create the base layer:
Press half of the oat mixture into the bottom of a greased or parchment-lined 8×8 inch (20×20 cm) pan.

Make the chocolate layer:
In a small saucepan, melt the chocolate chips and peanut butter together over low heat, stirring until smooth.

Add chocolate layer:
Pour the chocolate mixture over the oat base in the pan and spread evenly.

Top with remaining oats:
Crumble the remaining oat mixture over the chocolate layer and press down gently.

Chill:
Refrigerate for at least 2–3 hours or until firm.

Serve:
Cut into bars and enjoy!
