2 cups mashed potatoes (cooked and cooled)

1 cup shredded cheddar cheese (or a cheese mix)

2 eggs

1/4 cup milk

1/4 cup chopped green onions (optional)

Salt and pepper to taste

1/4 teaspoon garlic powder (optional)

Butter or oil for greasing the muffin tin

🍽️ Instructions:

Preheat oven to 200°C (400°F).

Grease a muffin tin with butter or non-stick spray.

In a large bowl, mix mashed potatoes, eggs, milk, cheese, green onions, salt, pepper, and garlic powder until well combined.

Spoon the mixture into the muffin cups, filling them almost to the top.

Optionally, sprinkle a little extra cheese on top of each muffin.

Bake for 20–25 minutes or until the tops are golden and slightly crispy.

Let cool for a few minutes before removing from the pan. Serve warm.
