2 cups rolled oats

½ cup dried fruits (cranberries, raisins, etc.)
¼ cup pumpkin seeds or sunflower seeds
2 large eggs (beaten)
3 tablespoons honey or maple syrup
2 tablespoons coconut oil or butter (melted)

Instructions:
1. Preheat the oven to 180°C (350°F). Line a baking tray with parchment paper.
2. Mix dry ingredients:
In a large mixing bowl, combine oats, mixed nuts, dried fruits, pumpkin seeds, and salt.
3. Add wet ingredients:
In another small bowl, beat the eggs, then add honey (or maple syrup), melted coconut oil (or butter), and vanilla extract. Mix well.
4. Combine:
Pour the wet mixture over the dry ingredients. Stir until everything is well coated.
5. Shape the cookies:
Using a spoon, scoop out small portions of the mixture and shape them into round cookies. Press slightly to flatten.
6. Bake:
Place the cookies on the prepared tray and bake for 12–15 minutes, or until golden brown.
7. Cool and enjoy:
Let the cookies cool on the tray for a few minutes, then transfer to a wire rack.
