Ingredients:

1 kg (2.2 lbs) shrimp, peeled and deveined

2–3 ears of corn, cut into chunks

1–2 potatoes, boiled and cubed (optional)

1 red bell pepper or 1 cup cherry tomatoes

4 garlic cloves, minced

100 g (7 tbsp) melted butter

1 tbsp olive oil

1 tsp paprika

1 tsp black pepper

1 tsp Cajun seasoning (or chili powder)

Salt to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (optional, for serving)

 

Instructions:

1. Boil the Corn
Bring a large pot of salted water to a boil. Add the corn chunks and cook for 5–7 minutes until slightly tender. Drain and set aside.

2. Prepare the Shrimp
In a large bowl, add the shrimp. Mix with minced garlic, melted butter, olive oil, paprika, black pepper, Cajun seasoning, and salt. Stir well to coat evenly.

3. Combine Everything
In a baking dish or foil tray, combine the shrimp, cooked corn, and bell pepper or cherry tomatoes. Pour any leftover butter mixture on top and mix everything together.

4. Cook

Option 1: Oven
Preheat the oven to 200°C (400°F). Bake for 12–15 minutes, or until the shrimp turn pink and are cooked through.

Option 2: Stove
Heat a large skillet over medium heat. Add the mixture and sauté for 8–10 minutes, stirring occasionally, until everything is well cooked.

 

5. Serve
Sprinkle chopped parsley over the top and serve hot with lemon wedges. You can also enjoy it with rice or bread.
