Egg Salad Sandwich

Ingredients:

4 hard-boiled eggs, chopped

2–3 tablespoons mayonnaise

1 teaspoon yellow mustard (optional)

Salt and black pepper to taste

1 tablespoon chopped fresh chives (or green onions)

2 slices of bread (your choice: white, whole wheat, multigrain)

Optional: lettuce leaves

Instructions:

1. Prepare the eggs:
Peel the hard-boiled eggs and chop them into small pieces.

2. Mix the filling:

In a bowl, combine the chopped eggs, mayonnaise, mustard (if using), salt, pepper, and chopped chives. Stir well until creamy and evenly mixed.

3. Assemble the sandwich:

Place the egg salad mixture on one slice of bread. Add lettuce if you like. Top with the second slice of bread.

4. Serve:

Cut the sandwich in half if desired. You can sprinkle extra chives on top for garnish.
