Ingredients:

– 2 cups cooked rice (preferably day-old)
– 1 cup mixed vegetables (peas, carrots, bell peppers)
– 2 eggs
– 2-3 tablespoons soy sauce
– 2 tablespoons vegetable oil (or sesame oil)
– 2 green onions, chopped
– 2 cloves garlic, minced
– Salt and pepper, to taste
– Optional: sesame seeds for garnish

Instructions:

1. Prepare the Ingredients: Make sure the rice is cooked and cooled (day-old rice works best). Chop the mixed vegetables and green onions, and mince the garlic.

2. Scramble the Eggs: In a large skillet or wok, heat 1 tablespoon of oil over medium heat. Scramble the eggs until fully cooked, then remove them from the pan and set aside.

3. Sauté the Vegetables: In the same pan, add the remaining oil. Add the minced garlic and cook for about 30 seconds until fragrant. Then add the mixed vegetables and sauté for 3-5 minutes until they are tender.

4. Add the Rice: Add the cooked rice to the pan. Break up any clumps and stir well to combine with the vegetables.

5. Flavor the Rice: Pour in the soy sauce and add the scrambled eggs. Mix everything thoroughly. Season with salt and pepper to taste.

6. Add Green Onions: Finally, add the chopped green onions and stir for another minute.

7. Serve: Garnish with sesame seeds if desired. Serve hot.
