Ingredients:

For the meatloaf:

2 lbs (900g) ground beef

1 cup breadcrumbs

1 small onion, finely chopped

2 cloves garlic, minced

2 large eggs

1/2 cup milk

1/4 cup ketchup

2 tbsp Worcestershire sauce

1 tsp salt

1/2 tsp black pepper

1/2 tsp paprika (optional)

1/2 tsp dried oregano (optional)

1/2 cup shredded cheddar cheese (optional, for extra flavor)

For the glaze:

1/2 cup ketchup

2 tbsp brown sugar

1 tbsp mustard (yellow or Dijon)

1 tbsp apple cider vinegar or white vinegar

 

Instructions:

1. Preheat oven to 350°F (175°C).

2. In a large bowl, combine the ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, and any optional seasonings or cheese. Mix until fully combined, but do not overmix.

3. Shape the meat mixture into a loaf and place it into a baking dish or loaf pan.

4. Prepare the glaze by mixing ketchup, brown sugar, mustard, and vinegar in a small bowl. Spread half of it over the top of the meatloaf.

5. Bake uncovered for about 1 hour (or until internal temperature reaches 160°F / 70°C). Halfway through baking, add the remaining glaze on top.

6. Let it rest for 10 minutes before slicing to keep it moist.

 

Serving suggestion: Serve with mashed potatoes, steamed vegetables, or rice.
