Ingredients:
250 g minced beef (or chicken/turkey)
1 medium onion, finely chopped
1 cup grated cheese (cheddar or mozzarella)
2 eggs
1/2 cup milk
1 cup all-purpose flour
1 tsp baking powder
2 tbsp vegetable oil or melted butter
Salt and black pepper to taste
Optional: chopped parsley or herbs for extra flavor
Preparation:
1. Preheat the oven to 180°C (350°F) and line a muffin tray with paper liners.
2. In a pan, cook the minced beef with chopped onion until browned. Season with salt and pepper. Set aside to cool slightly.
3. In a bowl, whisk together the eggs, milk, and oil.
4. Add flour and baking powder to the mixture and stir until combined.
5. Fold in the cooked minced beef and half of the grated cheese.
6. Spoon the mixture into the muffin liners until 3/4 full.
7. Sprinkle the remaining cheese on top of each muffin.
8. Bake for 18–22 minutes, or until golden and fully cooked.
9. Serve warm.
