Ingredients:
3 to 4 medium green tomatoes
1 cup all-purpose flour
1 cup cornmeal (or breadcrumbs for a variation)
2 large eggs
1/2 cup buttermilk (or regular milk)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika (optional)
Vegetable oil (for frying)

Instructions:
1. Slice the tomatoes
Wash and cut the green tomatoes into 1/4-inch thick slices.
2. Prepare the coating stations
In one bowl: add the flour, salt, pepper, and paprika.
In a second bowl: beat the eggs and mix in the buttermilk.
In a third bowl: add the cornmeal.
3. Coat the tomato slices
First, dip a slice in the flour mixture (coat well).
Then dip it into the egg mixture.
Finally, press it into the cornmeal until fully coated.
4. Heat the oil
In a large skillet, heat about 1/2 inch of vegetable oil over medium heat until hot (about 350°F / 175°C).
5. Fry the tomatoes
Carefully place the coated tomato slices in the oil. Fry for about 2–3 minutes on each side or until golden brown and crispy.
6. Drain and serve
Remove the fried tomatoes and place them on a plate lined with paper towels to drain excess oil. Serve warm.
