Ingredients:

4 large bell peppers (red, green, or any color)

1 lb (450 g) ground beef or turkey

1 cup cooked rice

1 small onion, finely chopped

2 cloves garlic, minced

1 cup tomato sauce (plus extra for topping)

1 tsp salt

½ tsp black pepper

1 tsp Italian seasoning (optional)

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 tbsp olive oil

 

Instructions:

1. Prepare the bell peppers:

Cut the tops off the peppers and remove the seeds and membranes.

Boil the peppers in salted water for 3–5 minutes to soften slightly. Drain and set aside.

 

2. Cook the filling:

In a pan, heat olive oil over medium heat.

Add chopped onion and garlic, sauté until soft.

Add ground beef and cook until browned. Drain excess fat.

Stir in cooked rice, tomato sauce, salt, pepper, and Italian seasoning.

Simmer for 5–10 minutes until well combined.

 

3. Stuff the peppers:

Place the peppers in a baking dish.

Fill each pepper with the beef and rice mixture.

Top with a spoonful of tomato sauce and shredded cheese.

 

4. Bake:

Preheat oven to 375°F (190°C).

Cover with foil and bake for 25–30 minutes.

Remove foil and bake an additional 10 minutes until the cheese is bubbly and golden.

 

5. Serve:

Let cool slightly before serving. Enjoy!
