1 ½ tsp baking powder

¼ tsp salt

1 tsp vanilla extract

½ cup (120ml) milk

¾ cup (130g) white chocolate chips

(Optional) a few chopped nuts or raisins

Instructions:

1. Preheat the oven to 175°C (350°F). Grease and line a loaf pan with parchment paper.

2. Cream the butter and sugar together in a large bowl until light and fluffy.

3. Add the eggs, one at a time, beating well after each addition.

4. Stir in the vanilla extract.

5. In another bowl, sift the flour, baking powder, and salt together.

6. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until well combined.

7. Fold in the white chocolate chips (and raisins or nuts if using).

8. Pour the batter into the prepared loaf pan and smooth the top.

9. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.

10. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
