Ingredients:
2 pounds ground beef
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1 packet French onion soup mix (optional but recommended)
2 eggs
1/2 cup milk
1–2 cups shredded Swiss cheese (or slices)
1–2 medium onions, sliced
1 tablespoon butter or oil (for sautéing onions)
Fresh parsley (optional, for garnish)
Instructions:
Prepare the Onions:
In a skillet over medium heat, sauté the sliced onions in butter or oil until they’re golden brown and caramelized. Set aside.
Mix the Meatloaf:
In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, French onion soup mix (if using), eggs, and milk. Mix well until fully combined.
Shape and Cook:
Shape the meat mixture into a loaf and place it in a crockpot (slow cooker).
Cook on low for 6–7 hours or on high for 3–4 hours, until the meat is cooked through.
Add Cheese and Onions:
In the last 15–20 minutes of cooking, top the meatloaf with the shredded or sliced Swiss cheese and caramelized onions. Cover until the cheese is melted.
Serve:
Slice and serve hot, garnished with fresh parsley if desired.
