Ingredients
For the crust:
1 ½ cups graham cracker crumbs (about 12 full crackers)
¼ cup granulated sugar
½ cup unsalted butter, melted
For the pecan pie layer:
1 cup light corn syrup (or golden syrup)
1 cup brown sugar, packed
½ cup heavy cream
½ cup unsalted butter
2 tsp vanilla extract
2 cups pecans, roughly chopped
For the cheesecake filling:
24 oz (680 g) cream cheese, softened
1 cup granulated sugar
1 cup sour cream, room temperature
3 large eggs, room temperature
2 tsp vanilla extract
For topping (optional):
Whipped cream
Whole pecans for garnish

Instructions
1. Prepare the crust
Preheat oven to 325°F (160°C).
In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
Press mixture firmly into the bottom of a 9-inch springform pan.
Bake for 10 minutes, then set aside to cool.
2. Make the pecan pie layer
In a saucepan, combine corn syrup, brown sugar, heavy cream, and butter.
Cook over medium heat, stirring constantly, until mixture comes to a gentle boil.
Remove from heat, stir in vanilla extract and pecans.
Pour half of this mixture over the baked crust, spreading evenly. Save the rest for topping.
3. Prepare the cheesecake filling
In a large mixing bowl, beat cream cheese until smooth and creamy.
Add sugar and mix well.
Blend in sour cream and vanilla extract.
Add eggs one at a time, mixing on low speed until just combined (do not overmix).
Pour cheesecake batter over the pecan pie layer.
4. Bake the cheesecake
Place the springform pan in a larger roasting pan. Fill the roasting pan with hot water halfway up the sides of the springform pan (water bath method).
Bake for 60–70 minutes, until the center is almost set (it should still jiggle slightly).
Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.
5. Top with pecan mixture
Once cooled, pour the remaining pecan pie filling over the cheesecake. Spread evenly.
Chill in the refrigerator for at least 4 hours, preferably overnight.
6. Serve
Remove from the springform pan.
Garnish with whipped cream and extra pecans if desired.
