Caramel Chocolate Chip Oatmeal Cookies

Ingredients:

1 cup rolled oats

1 cup all-purpose flour

1/2 cup unsalted butter (softened)

1/2 cup brown sugar

1/4 cup granulated sugar

1 large egg

1 tsp vanilla extract

1/2 tsp baking soda

1/4 tsp salt

1 cup chocolate chips

12–15 soft caramel candies (or homemade caramel)

2 tbsp milk (for melting caramel)

Instructions:

1. Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.

2. In a bowl, whisk together oats, flour, baking soda, and salt. Set aside.

3. In another bowl, cream together butter, brown sugar, and granulated sugar until fluffy.

4. Add the egg and vanilla extract, then mix well.

5. Gradually add the dry ingredients to the wet mixture and stir until combined.

6. Fold in the chocolate chips.

7. Scoop a spoonful of dough, flatten it slightly, place a piece of caramel in the center, and cover with more dough to seal.

8. Place on the baking sheet and bake for 10–12 minutes, or until golden brown.

9. Allow to cool slightly before serving so the caramel sets but remains gooey.
