Ingredients:
2 cups mashed potatoes (well cooled)
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese (optional)
1/4 cup red bell pepper, finely chopped
1/4 cup green onions or chives, finely chopped
1/4 cup fresh parsley, chopped
1 egg
1/2 teaspoon garlic powder
Salt and black pepper, to taste
1 to 1½ cups breadcrumbs (for coating)
Oil for deep frying
Instructions:
Prepare the Filling:
In a large bowl, combine the mashed potatoes, mozzarella, Parmesan, bell pepper, green onions, parsley, garlic powder, salt, and pepper. Mix until well combined.
Add the Egg:
Add the egg to the mixture and mix again until everything holds together. If it’s too soft, you can add a little breadcrumb to firm it up.
Shape the Balls:
Take small portions of the mixture and roll them into balls (about the size of a golf ball).
Coat with Breadcrumbs:
Roll each ball in breadcrumbs to coat it evenly.
Fry the Balls:
Heat oil in a deep pan over medium heat. Once hot, fry the balls in batches until golden brown and crispy, about 2–3 minutes per side.
Drain and Serve:
Remove from oil and place on a paper towel to drain excess oil. Serve hot with your favorite dipping sauce.
