Ingredients:
2 cans of salmon (drained, bones removed)
1 small red onion, finely diced
2 eggs
3 tablespoons Greek yogurt (instead of mayonnaise)
4 tablespoons whole wheat flour
4 tablespoons oat flour (or fine breadcrumbs)
2 tablespoons chopped fresh parsley
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and pepper to taste
Olive oil spray (for baking)
Instructions:
Prepare the Mixture:
In a large bowl, combine the salmon, diced onion, eggs, and Greek yogurt. Mix well.
Add Dry Ingredients and Herbs:
Stir in the flours, parsley, garlic powder, paprika, salt, and pepper. Mix until the texture holds together.
Form the Patties:
Using your hands or an ice cream scoop, shape the mixture into uniform patties and flatten slightly.
Bake the Patties:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with olive oil.
Place the patties on the sheet, spray the tops lightly, and bake for 10–12 minutes per side or until golden and firm.
Serve:
Serve hot with a side of lemon wedges or a light yogurt dipping sauce. Optional: Add a pinch of chili flakes to the mix for heat.
