Ingredients:

4 medium Yukon Gold potatoes

¼ tsp sea salt

⅛ tsp black pepper

¼ tsp dried thyme

¼ tsp garlic powder

¼ tsp smoked paprika

4–6 tbsp melted butter or olive oil

Preparation:

1. Preheat your oven to 400°F (200°C).

2. Wash and dry the potatoes thoroughly.

3. Slice the potatoes thinly, stopping just before cutting all the way through (like a fan or accordion).

4. In a small bowl, mix together salt, pepper, thyme, garlic powder, and paprika.

5. Brush or drizzle each potato generously with melted butter or olive oil.

6. Sprinkle the seasoning mix evenly over the tops and between slices.

7. Place on a parchment-lined baking sheet.

8. Bake for 45–50 minutes, or until golden brown and crispy on the edges.

9. Serve hot, optionally with sour cream or a dip on the side.
